Takeuchi Shuzoten

Takeuchi Shuzoten, located in Gosho-machi, Kanazawa, is the smallest brewery in the city with over 150 years of history.
Guided by the philosophy of 'brewing sake that brings joy to the locals,' they maintain a community-focused approach, with nearly 90% of their production sold directly to nearby residents. This has earned them a reputation as a 'phantom local sake' that is difficult to find even within Kanazawa city. Despite their small scale, they refuse to compromise on quality, exclusively using premium sake rice like 'Yamada Nishiki' and 'Gohyakumangoku,' polished to an average of 55%.
By employing a meticulous low-temperature, long-term fermentation process, they extract the maximum natural umami from the moromi. It is a sincere and warm brewery that preserves traditional flavors while remaining deeply rooted in the daily life of Kanazawa.
