Saga Shuzo is the sake brewery with the oldest history in Saga Prefecture. Originally named "Madonoume Shuzo Co., Ltd.", it later changed its name to "Saga Shuzo Co., Ltd.". Its founding began when the first generation, Roklemon Koga, a direct retainer of the Ryuzoji clan, was ordered to brew sake as a way to utilize surplus rice of the Saga Domain. Initially, it brewed sake under the brand name "Kankiku", but during the time of the eighth generation, Bunzaemon Koga, a miracle occurred where white plum blossoms blooming next to the brewery were blown by the wind and fell into the fermentation vat, causing an unprecedented rich aroma to waft from inside. Thus, it was named "Madonoume" (Plum of the Window). For brewing water, it uses slightly soft spring water from the Mitsuse Pass in the Sefuri Mountain range, the source of the Kase River. Therefore, there is a tendency for many of its sakes to be sweet, typical of Saga sake. In addition to sake, it also produces shochu and liqueurs.
