It uses ultra-soft water with a hardness of 14 springing from the foot of Mt. Takanosu in central Hiroshima Prefecture for brewing water, and is characterized by its focus on dry sake while utilizing the characteristics of Hiroshima's soft water brewing.
Suishin's dry sake is often described as "dry with just the right amount of sweetness remaining," and its balanced, refreshing taste is attractive. The fine and soft mouthfeel created by soft water brewing and the moderate umami spread in the mouth.
