Its most prominent feature is sake brewing that fuses traditional Noto Toji techniques with modern sensibilities. In particular, the seasonal limited series 'Oniotome,' which features 'Shimada-mage' (a Japanese hairstyle originating in Shimada) as a motif, is a popular series that expresses the changing seasons through both flavor and labels.
