Watanabe Shuzojo is a brewery founded in 1902, where the 4th generation Asako Watanabe currently brews sake as the only female Toji (master brewer) in Gifu Prefecture. Located in an area blessed with abundant spring water and clear streams called "Water City Ogaki," it features brewing using Ogaki spring water and "Koka no Shin-sui" (natural water gushing from Mt. Koka in Okunagara River, ultra-soft water springing up from 100 million years ago). The representative brand "Kakumin Shinsuishu" uses "Koka no Shin-sui" for brewing water, and is a sake brewed with ultra-soft water using Yamada Nishiki polished to 40%. "Shirayukihime" is a Junmai Daiginjo using rice grown by local farmers who reduced pesticides and chemical fertilizers and plowed in Chinese milk vetch, characterized by a slightly dry taste with a gentle mouthfeel.
