Fujihashi Tozaburo Shoten, founded in 1848 during the late Edo period, is a brewery with over 170 years of history in Fukaya City, Saitama Prefecture. Rooted in Fukaya, which flourished as a post town on the Nakasendo highway, it continues to preserve traditional handmade brewing techniques. Fukaya is also known as the birthplace of Eiichi Shibusawa, the designer of modern Japan, and this brewery has walked alongside regional history.
The commitment to brewing lies in careful preparation using carefully selected rice and pure underground water from the Arakawa system. The flagship brand "Azuma Shiragiku" is a sincere sake bearing the name of the founder's wife, Kiku. Featuring plump umami and a clean finish, it continues to be loved within Fukaya's local food culture.
In recent years, it has also developed the famous sake "Tomioka Silk Mill" named after Eiichi Shibusawa. While connecting traditional skills to the future, it is a brewery deeply rooted in the community that continues to brew Fukaya's pride.
