Imazato Shuzo is a long-established brewery that has been making sake in Hasami Town for approximately 250 years since its founding in the 9th year of Meiwa during the Edo period. Six of the brewery's buildings are nationally registered tangible cultural properties, with the main storehouse and middle storehouse believed to have been built near the time of founding.
Hasami Town is located in the center of Nagasaki Prefecture, bordering Saga Prefecture to the northeast. It is a quiet basin surrounded by mountains with beautiful terraced rice paddies. This environment is ideal for low-temperature ginjo brewing and supports the quality of Imazato Shuzo's sake. The town is also famous as a production area for Hasami-yaki pottery, where two traditional cultures of nihonshu and ceramics coexist.
The rice used is primarily contract-grown in Hasami Town, including Yamada Nishiki and Reiho varieties. Yamada Nishiki from Itoshima, Fukuoka Prefecture is also used, with carefully selected ingredients for brewing.
The flagship brand Rokujuyoshu was named with the wish that people across Japan would enjoy it, referencing the historical division of Japan into over 60 provinces. It has earned high acclaim domestically and internationally, including gold for junmai ginjo Yamada Nishiki and bronze for junmai Yamada Nishiki at the IWC, with the junmai daiginjo also winning silver.
