Senkin Shuzo is a brewery located in Iwaizumi Town, using water from Ryusendo Cave, one of Japan's three major limestone caves boasting world-class transparency, as brewing water. Ryusendo Cave has been selected as one of Japan's 100 Best Waters, and the clear water gushing out through limestone layers forms the foundation of sake brewing.
Sake using water from the underground lake inside Ryusendo Cave excels in mineral balance and brews a unique taste. They also handle special products stored and aged inside Ryusendo Cave, realizing a mellow yet sharp taste through aging utilizing a constant temperature environment of about 10 degrees throughout the year.
Using Iwate Prefecture's sake brewing rice, they manufacture a wide range of grades of sake such as Daiginjo, Junmai Daiginjo, Junmai Ginjo, Tokubetsu Junmai, and Honjozo. International acclaim is also rising, such as winning the Gold Medal at the French sake competition "Kura Master."
