Takashima Shuzo is a historic brewery located in Hara, Numazu City, Shizuoka Prefecture. It began its journey by meeting the demands of travelers at the 'Hara-juku' post station along the old Tokaido road.
Today, led by brewery owner and master brewer Kazutaka Takashima, the brewery operates under the passionate concept of making 'local sake that can only be crafted here into the ultimate communication tool.'
The brewing water is pristine Mt. Fuji snowmelt pumped from 150 meters underground. They are deeply committed to local production, using carefully selected Shizuoka-grown rice such as Yamada Nishiki and Homare Fuji, as well as sustainably grown 'Aikoku' rice.
As a brewery dedicated to producing only Junmai sake, they employ traditional time-consuming methods like Hako-koji (box koji making), Fune-shibori (traditional pressing), and Binkan-kyurei (bottle pasteurization with rapid cooling) for all products. Using Shizuoka Yeast (NEW-5), their sake is characterized by a transparent, smooth finish unique to the soft water of Mt. Fuji. They continuously strive for the perfect 'food-pairing sake' that complements and elevates any meal.
