Hananotsuyu is a historic brewery founded in the Edo period, located in Jojima town, blessed with the rich water of the Chikugo River and rice from the fertile Chikushi Plain. Jojima is known as one of Japan's leading sake brewing districts, called "Nada of the West, Jojima of the East," and Hananotsuyu is one of the breweries with the oldest history among them.
Using the clear underground water of the Chikugo River as brewing water, they have inherited sake brewing using locally produced sake rice for generations. While the brewery's method is based on traditional handmade techniques, they strive to improve quality by incorporating technological innovations adapted to the times.
Distinguishing itself from the generally preferred dry taste, it pursues a sake quality characterized by a slightly sweet and plump flavor. This unique sweet flavor is based on a design that emphasizes harmony with food and has developed together with the rich food culture of the Chikugo region.
