Miwa Sakura Shuzo is a brewery founded in 1923, brewing sake in the rich nature of Miwa-cho, Miyoshi City. The current president, Mr. Yoshiaki Sakata, is the fourth generation, and his belief is to continue brewing sake that is typical of his company without wavering, without being influenced by trends.
Miwa-cho is at an altitude of about 300m, and its temperature difference nurtures high-quality rice, making it one of the leading rice-producing areas and a designated complex for sake rice. Using 100% Miyoshi-grown Hattan Nishiki rice and underground water from Mt. Odo, almost all of the raw rice is produced in the town, and the brewery itself works on rice cultivation with thorough commitment.
By polishing rice with in-house milling, making firm koji, and conscious of the balance between taste and aroma, the umami of sake rice is maximized. It has the characteristic that all are savory sake, and you can enjoy a solid taste with swelling in both taste and aroma. Comments such as "deliciousness that does not change whenever you drink" and "enjoy stable drinking comfort" are received from fixed fans, and certain quality is evaluated such as winning superior prizes at the Hiroshima Regional Taxation Bureau Sake Appraisal.
