Iwase Shuzo is a long-established sake brewery with a history of about 300 years, located in Onjuku Town on the Boso Peninsula. Its biggest feature is the use of Japan's leading super hard water with a hardness of about 240. By combining this mineral-rich water that has passed through shell layers with the traditional "Yamahai brewing" method, it brews powerful sake with rich umami and firm acidity. "Iwanoi Yamahai Junmai Daiginjo" is highly acclaimed overseas, receiving a high score in the evaluation by world-renowned wine critic Robert Parker.
