Asahiduru was founded in the former Mawatari Village (now Mawatari, Sakura City, Chiba Prefecture) by the founder, Kanzaburo Tanaka, who was from Niigata Prefecture and learned sake brewing, and is the only sake brewery in Sakura City. It continues the old-fashioned "Funa-shibori" (traditional pressing) method which takes time and effort, and because it is squeezed slowly with the weight of the moromi and weak pressure, it features less off-flavors and a solid umami.
It mainly uses rice produced in Chiba Prefecture for sake rice, contracting with three farmers in the prefecture to adopt "Fusa no Mai" from Chiba City, "Fusa Kogane" from Sakura City, and "Yamada Nishiki" from Sosa City. Using natural groundwater flowing from Yasaka Shrine next to the brewery, it launched the "Sakura City Sake Brewing Council" and practices sake brewing in cooperation with the region.
