Takahashi Shosaku Shuzoten, founded in the early Meiji period, is a singular brewery in Aizu-Wakamatsu City that adheres to the philosophy of "Dosan-Doho" (Local Rice, Local Water, Local Method).
Based on the principle of "local people brewing with local rice and water using local techniques," they use only rice from their own fields spread within a three-kilometer radius of the brewery. They boast an exhaustive commitment to ingredients, with 20% of all rice being organically grown without pesticides or chemical fertilizers, and 80% being specially cultivated to standards higher than local requirements.
Since 2019, they have launched the field-specific series "Jo" (Harvest) under the concept of "One Field, One Brew." This unique approach, sealing the individuality of each field's soil and even the transition of seasons into the bottle, has gained overwhelming support from discerning fans as a pioneer of "terroir" in sake.
