Taiwagura Shuzo originated from a long-established brewery founded in 1798 (Kansei 10) in Takahata Town, Yamagata Prefecture, which relocated to Taiwa-cho, Kurokawa-gun, Miyagi Prefecture in 1996 (Heisei 8) and was renamed as a brewing plant under the "Yamaya" liquor retail chain group.
Initially, they focused on mechanization by introducing state-of-the-art equipment, but since taking over Miyagi Shurui's flagship brand "Yuki no Matsushima" in 2007 (Heisei 19), they have increased manual processes.
Particularly to brew super dry sake, they switched from fully automatic koji making machines to semi-automatic ones, and adopted complete manual labor in the koji room for Ginjo sake. They have developed a sake that is super dry with a Sake Meter Value of +20, yet has a light mouthfeel and mellow umami.
Junmai Ginjo sake brewed with "Kura no Hana," a sake-brewing rice developed in Miyagi Prefecture, is characterized by a good balance of refreshing fruit aroma, richness, and deliciousness.
In the Junmai Sake category of "SAKE COMPETITION 2023," "Yuki no Matsushima KAI Junmai Genshu Hitomebore" won 1st place. They have also won multiple gold medals at the Fine Sake Awards in Wine Glass.
Utilizing the rich natural environment of Taiwa-cho dedicated located at the foot of the Nanatsumori mountains, they are also putting effort into sake brewing using local rice and water. It is a brewery that produces high-quality and unique sake while balancing mechanization and handmade production.
