Sendai Isawa Ke Katsuyama Shuzo is the oldest sake brewery in Miyagi Prefecture, founded in 1688 (Genroku 1), boasting a history of over 300 years. The Isawa family is a distinguished family dating back to 1190 in the Heian period and has served the Date clan for generations.
As the official sake brewer of the Date clan of the Sendai Domain, they brewed "Katsuyama" and have had deep ties with the Date family since Lord Date Masamune. They have continued high-class sake brewing as the "Sendai Date Clan Official Brewery" since the Edo period.
Their sake brewing uses the highest quality rice and traditional techniques, insisting on careful handmade production. Adhering to a policy of small production and high quality, they have won numerous gold medals at the Annual Japan Sake Awards.
They use high-quality groundwater from Izumi-ku, Sendai City, as brewing water, creating a mellow and elegant sake quality. For rice, they use carefully selected sake-brewing rice, centered on Yamada Nishiki from Hyogo Prefecture.
Even in modern times, while protecting the Date family's tradition and prestige, they are also working on innovating sake brewing to suit the times. Their stance of continuing to pursue high-quality sake by balancing tradition and innovation is highly evaluated.
