Choro Shuzo, founded in the early Meiji era, is the only sake brewery in Kyotanba Town, Kyoto.
Located at the foot of the sacred mountain "Mt. Chorogatake" in the Tamba Highlands, they continue honest sake brewing rooted in the community against the background of clear underflow water and crisp air.
Faithfully protecting the traditional techniques of "Tajima Toji," they maintain a handmade production method without relying too much on machines in all processes, sharpening the brewery workers' five senses.
For sake rice, they mainly use locally grown "Gohyakumangoku" nurtured by Kyotanba Town's rich land. It boasts an ideal sake quality as an in-meal sake, drawing out the full umami of rice while achieving a clean and sharp finish.
The sake bearing the name of the famous peak is exactly the spirit of Tamba itself, having spent severe winters of Kyotanba together and continued coloring the celebratory days of local people.
