Yasui Shuzo

A traditional brewery founded in the Meiji era, located at the foot of the Suzuka Pass in Tsuchiyama-cho, Koka City, known as a difficult spot on the former Tokaido Gojusantsugi.
They still carefully protect traditional "Kanzukuri" (winter brewing), taking advantage of the rich underground water springing from the Suzuka Mountains and the severe winter cold.
Aiming for "the local sake among local sakes" loved by regional people, their sincere sake brewing faces each process faithfully despite small-scale production.
While respecting tradition, they are a brewery that actively challenges the pursuit of new sake qualities that nestle close to the diversification of food.
