Yoshioka Shuzojo, founded during the Kansei era (1789-1801), is a traditional brewery carving more than 230 years of history in Yasaka-cho, Kyotango City, Kyoto.
Inheriting the outstanding skills of Tango Toji for generations, they currently maintain careful sake brewing by the hands of the Toji and local brewery workers under the spirit of "Small quantity, high quality."
The biggest feature is maintaining the method of pressing all sake with traditional "Kifune" (wooden tanks), which has become extremely rare today. Without applying machine pressure, by slowly pressing out with its own weight, a surprisingly transparent taste with minimal off-flavors is born.
For brewing water, they use rich underflow water of Mt. Kongodouji, a sacred mountain of Shugendo, resulting in an honest sake quality where rich umami and a soft mouthfeel co-perform.
The single drop born from their honest attitude of valuing tradition is a supreme work of art that makes one feel Yasaka's rich climate with all five senses.
