Hiyokutsuru Shuzo is a long-established brewery located in Jojima-machi, Kurume City, Fukuoka Prefecture, a famous sake brewing spot called "Nada of the West." Since its establishment in 1895, it has continued to brew sake loved by the locals with the clear underground water of the Chikugo River.
The name "Hiyokutsuru" (Winged Crane) is derived from the "Inseparables" (Hiyoku no Tori) appearing in the "Song of Everlasting Regret" by Chinese poet Bai Juyi, symbolizing a harmonious couple and deep bonds. This name contains the wish to deepen the bonds between people through sake.
Using mineral-rich water pumped from about 200m underground of the Chikugo River as brewing water, they aim for sake that you don't get tired of drinking and that accompanies daily meals. Participating in "Jojima Sakagura Biraki," the largest brewery opening in Kyushu held in Jojima town, it is a brewery familiar to many sake fans.
