"Tokoyama Shuzo" is a long-established brewery boasting the longest history in Fukui City of over 400 years.
It started full-scale sake brewing in the late Edo period, initially handling a brand called "Joshu."
Later, it created "Habutae Masamune," named after Fukui's specialty "Habutae Silk."
Furthermore, with the ambition of "wanting to brew sake that is excellent in both name and reality," the current flagship brand "Jozan" was born.
Using brewing rice grown in the Miyama district of Fukui City and clear water, they continue to brew "Echizen Dry" sake, also described as "Tanrei Umakuchi" (light and flavorful), where crispness and rice umami harmonize.
