Nagao Shuzo, founded in 1744, is an extremely small brewery weaving more than 260 years of history in Nakahama, a fisherman's town near the northern tip of the Tango Peninsula.
Within the severe natural environment where rough waves of the Sea of Japan surge, they have inherited traditional skills of Tango Toji for generations. Closely interacting with local people's lives, they continue brewing powerful tastes unique to Tango.
For brewing water, they use "Ukawa no Mizu," a natural spring water from behind the brewery. This clear water is the key to drawing out the strong umami of rice.
The biggest feature is the sharp and honest sake quality boasting excellent compatibility with fish dishes, just like something local Tango fishermen would enjoy after finishing their sea work.
