Echi Shuzo

A brewery located in Aishō-cho, Echi-gun, which performs sake brewing taking advantage of the clear water of the Suzuka Mountains and locally produced rice while protecting traditions continuing since the Meiji era.
The name "Echi" originates from the former Echi River and is deeply rooted in the regional climate and history.
Their sake, into which the craftsman's technique and passion are poured, is characterized by a mellow taste that draws out the umami of rice to the maximum.
Despite being small-scale, they value careful handwork and aim for a glass that remains deeply in the drinker's heart.
