Kanemasushuzou

Kanemasu Shuzo, founded in 1822, is a historical brewery located in Shibata City, Niigata Prefecture. While inheriting traditional sake brewing techniques, it is known for its challenging attitude of tackling innovative technical development through industry-academia-government collaboration.
Of particular note is the 'AWANAMA' project, which succeeded in maintaining the freshness of unpasteurized sake (Namazake) at room temperature for a long period using high-pressure processing technology. This technology, which makes it possible to deliver the original flavor of Namazake without any heat sterilization even to distant overseas countries, has opened up new possibilities for sake. It also provides a place where local people and tourists can easily touch sake culture through the 'Kura Cafe' on its premises. It is a brewery that transmits the deep charm of Shibata, where the weight of tradition and flexible sensibilities that accompany modern lifestyles coexist.
