Kubo Honke Sake Brewery is a brewery in Uda City, Nara Prefecture, with a history of over 300 years, founded in the Genroku era of the Edo period (1702). Located in the Important Preservation District for Groups of Traditional Buildings in Uda Matsuyama, it has carved out history along with the tasteful townscape.
Based on the belief that "sake is not made, but raised," they adhere to traditional "Kimoto-zukuri" (traditional starter method) and pursue "complete fermentation" that maximizes the power of microorganisms.
By completely converting sugar into alcohol, they realize a sharp dry sake quality and brew sturdy sake that can withstand long-term aging. The umami that deepens with aging blooms even more when warmed, demonstrating outstanding compatibility as a sake to accompany meals.
In addition to representative brands "Hatsugasumi" and "Suiryu", they continue to brew unique sake that you will never get tired of drinking, such as the rich-tasting "Kimoto no Dobu".
