Daishichi Shuzo, founded in 1752, is a world-renowned brewery with 270 years of history in Nihonmatsu City, Fukushima.
They are globally unique for adopting the "Kimoto" method—the most traditional and orthodox brewing technique—for all of their products. Persisting with labor-intensive Kimoto brewing, they uphold the belief that "Kimoto is not an outdated style, but the supreme brewing method of the world that serves as the royal road."
With their unique "super-flat milling" technology that polishes rice uniformly from the surface, they achieve an innovative quality by removing impurities to the absolute limit. Selected as the toast sake for the G8 Summit in Toyako in 2008 and praised by top European sommeliers as the "Romanée-Conti of sake," their elegant brews have established an unshakable status as an international gold standard. As their motto says, "For sake, it's Daishichi; for taste, it's number one," they are a treasure of Japanese sake that has sublimated tradition into true peak quality.
