Saura was founded in 1724 (Kyoho 9) and became the official sake brewer for Shiogama Shrine in the latter half of the Edo period. The first head of the Saura family, Tomiemon, initially ran a koji manufacturing business, but founded the brewery in 1724 after inheriting brewing shares. The founder came from Kyoto to Shiogama and was adopted into the Miuraya Gonemon family, taking one character from each family's name to form the trade name "Saura."
Over 300 years of history, maintaining a close relationship with the community amidst the elegant scenery of Shiogama, the second brewery, "Yamoto Gura" (Higashimatsushima City), was completed in 1994.
Shortly after the war, the Ginjo sake "Urakasumi" brewed by the famous master brewer (Toji) Sagoro Hirano and his nephew and successor Juichi Hirano won top prizes every year at the National New Sake Appraisal. In 1966, yeast was isolated from the Ginjo mash and called "Hirano Yeast," which was registered as "Kyokai No. 12 Yeast" in 1985.
Aiming for "dignified sake," it features a harmony of taste and aroma, a mellow and elegant flavor, and goes well with meals, especially seafood, enhancing the taste.
The outstanding skills of the late Honorary Toji Juichi Hirano created the famous sake "Urakasumi Zen," a masterpiece of light and dry (tanrei karakuchi) sake that changed the image of post-war sake and pioneered the subsequent Ginjo and local sake booms. The representative brand is "Urakasumi," known as the brewery where Kyokai No. 12 Yeast originated.
