Zao Shuzo was founded in 1873 (Meiji 6) and is currently the only brewery in Shiroishi City. It was reorganized as "Watanabe Brewing Co., Ltd." in 1913 (Taisho 2), changed the sake name to "Zao" in 1931 (hashowa 6), and changed the company name to "Zao Shuzo Co., Ltd." in 1970 (Showa 45).
For brewing water, they pump up soft groundwater from the Zao mountain range from 50 meters underground within the brewery premises, and for specially designated sake, they contract farmers in Shiroishi City and Kakuda City to grow sake rice such as "Miyama Nishiki" and "Kura no Hana."
The main brand "Zao" has received high praise, such as winning the Gold Prize at the National New Sake Appraisal.
Young brewers, averaging around 30 years old, led by the Toji (master brewer) and Vice Toji, are in charge of sake brewing, and while protecting traditions, they are also challenging sake brewing for a new era.
At the Zao Shuzo Exhibition Hall, free tasting and purchase of sake are possible, and brewery tours are also held by reservation, making it popular as a brewery open to the community.
