Using 100% "Hakutsuru Nishiki" produced in Tamba-Sasayama City, preparing with underflow water of the Takiyama system, and brewing with the techniques of Tamba Toji, is sake expressing complete "Tamba-Sasayama Terroir." Characterized by sake quality that stays close to meals, with a dry taste where rice flavor is firmly felt while having a clean drinking mouth. By using in-house grown rice, consistent quality control from rice fields to brewery is realized, expressing the climate of Tamba-Sasayama to the maximum extent.
Kuromatsu Taikan
黒松大観"Kuromatsu Taikan" is the representative brand of Uchida Sake Brewing, having a history since the early Showa era. Characterized by traditional sake brewing using clear water of Tamba and high-quality sake rice, it has been loved for many years mainly in the local area. Solid quality and a taste that one does not get tired of drinking have become established in the region as evening drink sake.
Tamatsurugi
玉つるぎ"Tamatsurugi" was a brand brewed by Nakaotsuki Sake Brewing, but it is currently not produced due to the brewery going out of business. It remains recorded as a historical brand.
Hyakunin Isshu
百人一酒"Hyakunin Isshu" is the representative brand of Kamonosho Sake Brewery, a Junmai Namazake brewed with Koshihikari rice brought by about 100 local farmers. Born from an initiative to solve the rice surplus problem locally, it holds a special meaning as sake made by local residents and the brewery together. Characterized by the firm rice flavor unique to Junmai sake and the fresh taste typical of Namazake. With a brand name containing auspicious images of "Kacho Fugetsu" (Flower, Bird, Wind, Moon - beauties of nature) and "Suehirogari" (spreading out like an open fan - becoming more prosperous), it is familiar mainly in the local area.
Shizenshu
自然酒"Shizenshu" is a brand series using organically grown rice that Yamana Sake Brewery has been working on for over 30 years. Acquiring organic JAS certification in June 2025, it was recognized as one of the few fully organic sakes in the country. Sake rice grown without pesticides or chemical fertilizers has a dense taste condensing the blessings of nature, and expresses the individuality of each farmer's rice field through individual brewing.
