Sari
"Sari" is named from the Sanskrit word meaning "rice," which is also the origin of the word "shari" (sushi rice). Created by the 3rd generation brewer with the concept of "sake that goes well with seafood." It features a refreshing acidity like citrus fruits and a pleasant umami, making it an excellent match not only with Japanese food but also with Western dishes like carpaccio.
Kokufushi
"Kokufushi" is a traditional brand of Yasumoto Shuzo, once loved as the official sake of the Echizen Matsudaira clan. Its name derives from "Kokufu" indicating high quality and "Shi" meaning government office or administrator, representing it as a high-status sake. It is now loved mainly locally as an evening drink that preserves the old-fashioned taste.
Hakugakusen
"Hakugakusen" is Yasumoto Shuzo's modern flagship brand launched by the 46th generation. It was named taking "Haku" (White) from the Hakusan water vein, "Gaku" (Mountain) from the land surrounded by mountains, and "Sen" (Hermit/Gathering) wishing for a place where people gather. Using rice and water from Fukui Prefecture and original yeast, it features a modern taste full of transparency, sealing in the freshness of freshly pressed sake through rapid cooling and bottle warming pasteurization.
Akenotsuru
"Akenotsuru" is the flagship brand of Rikisen Shuzo. Brewed carefully by hand using mineral-rich natural water and high-quality Fukui sake rice. It is characterized by a taste where the rich umami of rice spreads despite being a crisp dry sake. Koshinotaka
