"Hakumai Jo" (White Rice Castle) is the flagship brand of Nakayama Shuzo, derived from the legend of Hakumai Castle (Azaka Castle) that towers behind the brewery.
A story of resourcefulness where white rice was poured over a horse's back to look like water in order to deceive the enemy's eyes.
Like that legend, it was named with the wish to be a sake with a charm that attracts people's hearts.
Ideally suited for a female toji, it has a supple taste where you can feel the sweetness of rice even within its cleanliness.
