萬勝は、吉田屋が製造する代表銘柄で、日本でわずか5か所程度しか残っていない伝統製法「はねぎ搾り」（羽根木絞り）を用いています。
花酵母を使用した日本酒造りにも取り組んでおり、純米吟醸「普賢の夢」では桜の花酵母を使用しています。伝統技法と花酵母の融合により、南島原の風土を表現した日本酒として評価されています。
