Kusudama
"Kusudama" was originally written as "Medicine Ball," but was later changed to "Kusudama" with the meaning of "Gem (Treasure) that maintains longevity for a long time." Using underground water from the Northern Alps of Hida Takayama and Hidahomare grown under contract with local farmers, the traditional taste brewed in the severe cold continues to be loved locally as a celebratory sake.
Hida no Karakan
"Hida no Karakan" is an abbreviation for "Hida's Dry Warmed Sake" and is a brand developed exclusively for warmed sake. Using Hidahomare with a polishing ratio of 60%, it is finished as a rich and sharp dry sake with a Sake Meter Value of +7 (very dry) and acidity of 1.8. From lukewarm to hot, warming it expands the umami of the rice, making it an excellent match for food.
Himuro
"Himuro" is the representative brand of Niki Shuzo, a Daiginjo Namazake (unpasteurized sake) that has been loved since the time when refrigeration technology became widespread and the distribution of Namazake became possible. Yamanohikari
"Yamanohikari" is a carefully brewed brand by Hirata Shuzojo. By daring to use "Hidahomare" with a low polishing ratio of 90%, it brings out the powerful umami and deep taste inherent in the rice. The slightly dry and classical taste increases in fullness when warmed, not to mention when cold, and is an excellent match for meals. It is also certified as "Made by Hida Takayama" as "Hida no Hana Yamanohikari."
Hida no Hana
"Hida no Hana" is popular as the representative brand of Hirata Shuzojo. Using local sake rice "Hidahomare" and clear underground water from the Northern Alps, it is finished as a light and dry sake. It is gorgeous and fragrant, with a smooth mouthfeel, and the five tastes of sweetness, dryness, acidity, astringency, and bitterness are exquisitely balanced.
