Asahimatsu Shuzo is a long-established brewery in Kurogi-machi, Yame City, founded in the 5th year of Taisho (1916). For over 100 years since its founding, they have stubbornly protected traditional handmade brewing in the modern age where mechanization is progressing.
The greatest feature is that the entire amount is pressed using the old-fashioned "Fune-shibori" (tank pressing) method. By putting the mash in sake bags, stacking them, and applying gentle pressure, clear sake without unpleasant tastes is born. In addition, they use a Japanese cauldron and Koshiki (steamer) instead of a boiler for the rice steaming process. The annual production volume is extremely small, and it is a rare local sake that is difficult to obtain even locally, impressing enthusiasts.
