Ikuma Shuzo is a long-established brewery founded in the first year of Keio (1865), located in Tojo-cho, Shobara City, Hiroshima Prefecture.
The most significant feature of this brewery is that it uses "hard water" with a hardness of 100 for brewing, which is extremely rare in Hiroshima Prefecture. Using mineral-rich water springing from Taishaku Gorge (Karst Plateau), one of the 100 Landscapes of Japan, and water from Shiroyama pump up from the brewery's well, it creates a uniqueness found nowhere else.
The representative brand "Chogun" was named with the hope of excelling in the sake brewing world like Mt. Fuji towering among the mountains, or like a single crane in a flock of chickens. It is attractive for its taste where deep umami can be felt within the crisp dryness unique to hard water brewing, and it is a sturdy sake that overturns the image of Hiroshima's soft water and sweet sake.
