As the Iwaki region has a warm climate even in winter, managing the temperature of "Moromi" (mash)—the most crucial part of brewing—is very difficult, requiring advanced techniques to fully utilize the abundant water gushing from the Abukuma Mountain Range. The sake quality forged under this severe environment possesses both a sharp finish and mellow umami that stays close to the local dishes of Iwaki, rich in seafood.
