The current head, Koichi Matsuo (known as Den-ichiro in the brewing world), was the first disciple of Denbe Kawamura, the creator of 'Shizuoka Yeast.' This unique lineage defines the brewery's identity.
They strictly use Shizuoka Yeast to produce a refined 'Shizuoka-style' Ginjo, characterized by a clean, fruity, and fresh profile with elegant smoothness and a gentle finish. Their annual production is limited to about 200 koku (approx. 36,000 liters), all handcrafted by the family, including bottling and labeling. It is a rare gem that purely preserves the traditions of Shizuoka brewing.
