Using middle-hard underflow water from Mount Gassan, they long adhered to sincere sake-making as "Seikatsushu" (lifestyle sake) that does not prioritize aroma alone and remains stable even when warmed.
While flagship brands like "Kikuisami" and "San-ju-rokuninshu," which inherited Sakata's proud history, were beloved by many fans, the brewery unfortunately ceased operations in September 2024. The supreme flavors that conveyed Shonai's terroir and tradition remain deeply engraved in the memories of many.
