Morohashi Shuzo, founded in 1847, is a historic brewery located in the Kita-Nigoro district of Nagaoka (formerly Tochio), Niigata. Its flagship brand, 'Koshi no Kagetora,' is named after the legendary Sengoku warlord Uesugi Kenshin, who spent his youth in Tochio under the name Nagao Kagetora. The brewery utilizes exceptionally soft water for brewing, including spring water from 'Todo no Mori,' designated as one of Japan's top 100 water sources, and water from an ancient horizontal well on and around the premises. They use 100% carefully selected sake rice, primarily from Niigata Prefecture, such as Yamada Nishiki, Gohmanyakoku, and Koshi Tanrei. Characterized by a gentle, elegant aroma and a crisp finish, their sake offers a smooth, dry flavor that reflects the rich history and terroir of the Echigo region.
