Ena Jozo is a long-established brewery founded in 1818 (Bunsei 1), located deep in the mountains at an altitude of about 600 meters in Fukuoka, Nakatsugawa City. Since acquiring a sake brewing license at the end of the Edo period, it has continued to brew sake in the inconvenient mountains for over 200 years. Using mineral-rich soft water springing from the mountain behind, Mt. Futatsumori, and Gifu Prefecture's sake rice "Hidahomare," the family mainly brews sake by hand in the silence overlooking the Kiso mountains.
