The brewery operates under the philosophy of 'Bimi Kyushin'—the pursuit of the truth of deliciousness. Using underground water from the Tateyama Mountain Range and the expert techniques of Noto Toji (master brewers), they craft their signature sake, 'Masuizumi.'
The name Masuizumi combines the family name 'Masu' (measuring cup) with the auspicious characters for '寿' (longevity) and '泉' (spring). Designed to complement Toyama's abundant seasonal seafood, it is a highly regarded food-pairing sake both in Japan and abroad.
