Matsu Midori Shuzo is located in Hirosaki City, Aomori Prefecture, situated to the west of the 400-year-old Hirosaki Castle and under the watchful gaze of Mt. Iwaki, known as "Tsugaru Fuji."
The brewery has a unique history, once producing and selling "shubo" (yeast starter) made via a secret family method to brewers across the Tsugaru region before officially establishing itself as a full-scale brewery.
The name "Matsu Midori" (meaning "pine green") is derived from an ancient pine tree, over 300 years old, that still graces the garden landscaped during the Edo period.
Using pure water from the Shirakami-Sanchi World Heritage site and Mt. Iwaki, the brewery focuses on locally grown rice. They have committed to being a "Junmai-only" brewery, producing sake without added brewer’s alcohol to meet the modern demand for safe and high-quality sake.
Their flagship brands include "Rokkon," "Deka," "Reiho," and "Matsu Midori." "Rokkon," in particular, is an award-winning brand that represents their new challenges and dedication to perfection.
