Aoshima Shuzo, established in 1868 and located in Fujieda City, is a brewery that lives by the conviction that 'sake brewing starts from rice growing.' They are rare in Japan as they cultivate their own rice fields, consistently handling everything from raw material cultivation to brewing as both farmers and brewers.
Its most prominent feature is the pure and transparency-filled brewing that masterfully draws out the characteristics of Shizuoka's proud 'Shizuoka Yeast.' Excluding excessive aroma, its calm yet refined flavor that never grows tiring can be called one of the ideal forms of 'Shizuoka sake.' They mainly use the rare sake rice 'Matsuyama-mii,' which they protect together with local contract farmers, drawing out its maximum potential.
The sake of Aoshima Shuzo, born from the overlap of sincere rice growing and careful handwork, is a celebrated sake full of harmony and dignity that deeply and quietly permeates the drinker's heart.
