Hiryu Shuzo is a brewery founded in the Meiji era, located in Tachiarai Town, Mii District, Fukuoka Prefecture. The Higuchi family operated a wax shop making Japanese candles from haze (wax tree) berries until the mid-Meiji period, but as the demand for candles decreased due to the spread of electricity, they turned into a sake brewery brewing sake from rice harvested in the vast farmland they owned.
Initially, the brand "Hiryu" was mainstream, but they shifted their flagship brand to "Chikugogawa" (Chikugo River), providing dry and refreshing sake loved by locals. While using the underground water of the Chikugo River as brewing water, this precious water gives the sake quality a unique refreshing feeling.
As a community-based brewery, they continue sake brewing loved in the Chikugo region, developing a wide lineup from Josen and Honjozo to Junmai, Junmai Ginjo, Junmai Daiginjo, and Daiginjo.
