Operating under the trade name "Izumiya," they preserve traditional brewing methods using minimal equipment but maximum sensory expertise developed over centuries.
Since co-founding Gassan Shuzo in 1972, they have continued to produce rare and highly sought-after sake that is deeply rooted in their local community using the underflow water of the Asahi Mountain Range.
