"Ippongi Kubo Honten" is a brewery founded in 1902 (Meiji 35), located in Katsuyama City, Fukui Prefecture, known as one of Japan's leading dinosaur fossil excavation sites. This area, spreading at the foot of the sacred mountain Hakusan, is also a prime production area for the sake rice "Gohyakumangoku."
Originally a silk textile business, they switched to sake brewing. Pursuing "crisp dry sake," they strive to brew sake as a supporting actor that enhances the flavors of Fukui's food culture, such as "Echizen crab" and "Oroshi soba," without interfering with the meal.
