Flip a sake bottle around, and you might spot a line on the back label reading "Kyokai No. 9" or "Shizuoka yeast." That single line is a shortcut to predicting the aroma in the glass. Yeast is what generates aroma and acidity during fermentation, and switching strains can shift the whole character of the finished sake. This guide is built so you can work backward from "I want this kind of aroma" to the yeast strain behind it. What yeast actually controls: aroma and acidity

Yeast is a microorganism that converts sugar into alcohol and carbon dioxide. As a byproduct of that fermentation, it also produces aromatic compounds and organic acids. The fruity ginjo aroma prized in premium sake traces directly back to compounds the yeast created while fermenting. Acid levels shift with the strain, too.

If you're after an aromatic bottle, the yeast line on the label is your fastest lead. That said, aroma intensity isn't decided by yeast alone. A slow, low-temperature fermentation and how far the rice has been polished can swing the outcome just as much. What is Kyokai yeast?

Kyokai yeast refers to sake yeast strains distributed nationwide by the Brewing Society of Japan (Nihon Jozo Kyokai). The society isolates promising strains from the fermenting mash (moromi) of breweries that have produced outstanding sake, assigns each a number, and distributes it, a system running continuously since the Meiji era. Because a strain born in one brewery becomes available to breweries anywhere in the country, it gives the whole industry a stable foundation to brew from.

The numbers reflect the order of release. The earliest strains, No. 1 through No. 5, are no longer in circulation, so No. 6 is effectively the oldest still in use today. There's a trick to reading the numbers: a strain like No. 601, with "01" appended to a base number such as 6, is a non-foaming variant. It doesn't build up the thick foam cap during fermentation. That makes the tank easier to manage and lets brewers use more of its capacity.

The two compounds behind ginjo aroma

  • Ethyl caproate: a sweet note reminiscent of apple or pear. Strains in the No. 9 lineage (No. 9 itself and strains bred from it) and No. 1801 produce this in abundance.
  • Isoamyl acetate: a banana-like note. Some strains express it more strongly than others, but it's not a compound you can reliably predict from the number alone.

Even with the same strain, cooler fermentation temperatures tend to push aroma higher. So the yeast line by itself can't guarantee aroma intensity. It's the combination with brewing technique that ultimately decides it.

No. 6 was isolated from Aramasa in Akita in the early Showa era. It ferments well even at low temperatures and yields a clean, restrained style of sake. No. 7 branched off from Masumi in Nagano; its ease of use has kept it the volume leader in distribution to this day. No. 9 was isolated in Kumamoto and is prized for its showy ginjo aroma, arguably the benchmark strain for ginjo-style sake.

No. 1801 was bred specifically to heighten aroma. It produces abundant ethyl caproate (the apple-and-pear note) while keeping acidity restrained, and it has long been a favorite choice for daiginjo entries at the National New Sake Awards (Zenkoku Shinshu Kanpyokai). The wider world of flower and regional yeasts

Beyond Kyokai strains, sake brewers have other yeast options, most notably flower yeasts and regional yeasts.

Flower yeast is sake yeast isolated from flowers found in nature. A research lab at Tokyo University of Agriculture succeeded in extracting sake-brewing yeast from flower nectar, and the source flowers vary widely: pinks (nadeshiko), begonia, and abelia among them. Raifuku Shuzo, a brewery in Chikusei, Ibaraki Prefecture, is a well-known example of one that brews with a range of these flower yeasts. Part of the appeal is that the aroma shifts depending on which flower the yeast came from.

Regional yeasts are homegrown strains developed by prefectural research institutes, selected to suit local rice and climate. Shizuoka yeast, developed by Shizuoka Prefecture, is known for a light, fruity profile, for instance. Yamagata and Fukushima also have their own prefecture-specific strains. If you spot a yeast on a back label named after a prefecture, it's a clue pointing to that region's brewing character.
