Large Nokyo plums with thick flesh, 4 to 5 cm in diameter, are soaked in Umetsu Shuzo's Junmai sake and aged slowly. The umami of rice derived from sake and the rich acidity of Nokyo plums melt together, creating a modest sweetness and refreshing adult taste.
