Currently, the 6th generation, Takemichi Ishihara, pursues uncompromising sake brewing under the belief of "from one tank to one product." The biggest feature is that the entire amount is unfiltered and thoroughly temperature controlled. The finished sake is immediately bottled and stored and aged in refrigerated containers at minus temperatures. Drawing out the original potential of sake to the limit, they send out living sake into the world that deepens over time.
