二波山松緑"Futabasan Matsumidori" is the representative brand of Sasame Sobe Shoten, also known as the sacred sake of Kasama Inari Shrine. It is an auspicious name derived from Mount Futaba, located in the mountain range connecting the Nikko mountain range and Mount Tsukuba, and the lush green pines. Using the underground water of Mount Sashiro, it features "Harmony of Five Tastes" where sweetness, dryness, acidity, bitterness, and astringency are harmonious. It is a local sake with a deep taste that you will never tire of drinking, making you feel the history and tradition of Kasama.
Sato no Homare
郷乃誉 EC"Sato no Homare" is the representative brand of Sudo Honke, a Junmai Daiginjo filled with tradition and innovation since its founding. Without carbon filtration, it seals in the fresh flavor just after pressing. It has won numerous awards in global competitions and is used in three-star restaurants overseas, making it a premium sake loved all over the world.

三ツ扇"Mitsuoogi" is a traditional brand that was once brewed by Takita Shuzojo. It is derived from the auspicious design of three folding fans overlapping, which symbolizes expanding prosperity (Suehirogari). As sake that colored the celebratory seats and daily dining tables of Mito, it was loved for a long time.
Hyakusai
百歳"Hyakusai" is a brand of long-aged sake brewed by Yoshikubo Shuzo. As the name suggests, it contains the wish to be "cheerful until 100 years old." It features a mellow taste and a rich aroma due to aging. It is an auspicious sake ideal for gifts on special days and longevity celebrations.
SABA de SHU
SABA de SHU"SABA de SHU" is a sake dedicated to mackerel (Saba), unique to Ibaraki Prefecture, which boasts the largest landing volume of mackerel in Japan. Yukiyozuki
雪夜月"Yukiyozuki" (Snowy Moon) is an innovative Daiginjo sake jointly developed by Meiri Shurui and "Yukihana Lamy," a VTuber belonging to Hololive. Born from "Lamy's Sake Brewing Project," it uses Meiri Shurui's unique M310 yeast and features a taste that maximizes the sweetness and umami of rice. It is a bottle evaluated worldwide, such as winning a Bronze Medal in the Daiginjo category at the IWC (International Wine Challenge) 2022.

木内"Kiuchi" is a carefully selected brand bearing the name of Kiuchi Shuzo. It is brewed using traditional skills and carefully selected ingredients. Features a taste that reflects careful sake brewing, which can be said to be the origin of Kiuchi Shuzo. Among Kiuchi Shuzo which develops various alcoholic beverages, it is a bottle that pursues the essence of sake.
Mitsukuni
光圀"Mitsukuni" is the representative brand of Hiyama Shuzo, bearing the name of Tokugawa Mitsukuni (Mito Komon), who is related to Hitachiota. It is brewed near Seizan-so, where Lord Mitsukuni spent his later years. It features a mellow aroma and a rich and deep taste. It is a popular sake as a gift that makes you feel history and romance.
Senhime
千姫"Senhime" is a brand named after Senhime, the granddaughter of Tokugawa Ieyasu who lived a turbulent life. It is a sake unique to the place related to Senhime, who rests at Gugyo-ji Temple. Using Ibaraki Prefecture's original brewing rice "Hitachi Nishiki," it is finished with a mellow taste that makes use of the umami of rice. Although currently out of business, it is remembered as one of the historic local sakes loved by local people.
Manji
卍The "Manji" (swastika) was once the crest of the Tsugaru Clan, said to represent the spirit of "discarding self-interest to serve society." Since 1900, it has served as the official emblem of Hirosaki City. This historic mark, used as a flag insignia by the Tsugaru family during the clan administration period, is considered a symbol of virtue, harmony, and auspicious longevity.
Tomoju
友寿"Tomoju" is the representative brand of Aiyu Shuzo, named with the auspicious meaning of "Celebrate (Kotohogu) with friends." Using locally produced brewing rice "Gohyakumangoku" and spring water from "Omoido" which shares the same source as Kashima Shrine, it is brewed carefully. With a taste that combines gorgeousness and lightness, it is a sake suitable for coloring celebratory seats.
Ararefuri
霰降"Ararefuri" is a brand with an elegant name derived from Kashima's pillow word (Makurakotoba) "Ararefuri," which is also sung in Manyoshu. It is a sake unique to the land deeply related to Kashima Shrine. Using pure water and rice from Itako, it is slowly brewed in the cold of winter. Bunka
文華"Bunka" was a brand brewed by Tomine Shuzo, which had a history founded in 1805 (Kyowa 1). As local sake of Suigo Itako, it had been loved in the region for many years. In 1982, the brewery switched from sake brewing to a discount store business as "Itako Daikokuten," but it is currently out of business. It is one of the memorable brands that convey the history of sake brewing in Itako.
Kikuichi
幾久一"Kikuichi" was a brand brewed by Inou Shuzoten, founded in 1865 (Keio 1). It featured a light and dry refreshing taste that utilized the climate of the Ogawa district in Omitama City. The brand name "Kikuichi" contained the wish for everlasting prosperity, meaning "Forever (Kikuhisahしく) for a lifetime (Issei)." Although currently out of business, it is remembered as a sake that walked with the history of the region.
Takenoha
竹乃葉"Takenoha" was the representative brand of Takenoha Shuzo, located in Namegata City. Blessed with the rich water and nature of Lake Kasumigaura, it was loved as a sake with a refreshing and dignified taste like bamboo leaves. Although currently out of business, it is remembered as local sake of Namegata.
Azuma Takenoha
東竹乃葉"Azuma Takenoha" was another brand brewed by Takenoha Shuzo. Named emphasizing regionality as Takenoha of "Azuma no Kuni (Kanto)," it was a naming that emphasized regionality more. In the land of Namegata, which flourished with water transportation on Lake Kasumigaura, it was loved as a sake that cuddled up to the lives of local people. Currently out of business, its name remains as part of the history of sake brewing in the region.
